We produce wines of exceptional balance. This requires tight control over the fruit production paired with gentle technique. By dividing fruit into small lots and completing fermentation in the barrel, we are able to capture unique notes and flavors that are carefully preserved until the final blend is made.

This patient, traditional method allows the natural processes of fermentation and aging to frame the character of the wine, representing the historic traditions of winemaking.

We have an innovative side too—unique blends and varietal expressions quite different from what you may be used to. Explorations of techniques like carbonic maceration and the use of obscure varietals shows off a more youthful approach. By establishing wine production in this region, we confront conventional thinking about vineyards and wine itself and celebrate the pioneering spirit of the Palouse.

Our Current Wines:


2010 Cabernet franc: $22   This varietal offers a buttery nose and a bright, clean opening with palate-cleansing acidity that makes it a great food wine.  Medium-bodied, with a cherry undertone, this pleasing red is the perfect accompaniment for a light meal, from lamb to salmon, a dinner salad, or that box of quality chocolates that finish the meal.

2009 Sangiovese: $22   This classic Italian grape yields a dry and fruity wine in the Italian style, with spicy and leathery overtones of anise and allspice in the nose and cherry liqueur and bitter orange in the mouth that culminates with a mouth-filling wet stone experience with lingering fruit.  This wine would go well with roasted or smoked meat or a hearty white pasta.

Syrah: $24  This award-winning syrah (Sunset International, 2017 bronze medal) invites you with a fresh, clean nose with overtones of balsam, wet stone and caraway that leads into  cherry, fresh cream and currant in the mouth and a mellow finish of dried fruit. The wine is finished in a dry style and should age well.  Its reserved nature lends it well to pairing with dishes such as lamb and delicate seafood entrees.

   

2016 Sauvignon blanc: $19   In our canyon vineyard, Sauvignon blanc expresses a very slightly sweet, nutty, buttered toast flavor with a touch of citrus.  This vintage pleases the palate with slightly sweet orange blossom honey up to the lemon drop finish.  Chill a bottle to enjoy with a green salad and bleu cheese dressing or a dessert of sharp cheeses and fruit. The sweetness also provides a perfect foil for the spicy Thai or curry dish.

 

Malbec-Carmenere: $30   This exquisite blend of deep red wines balances pleasing acidity with anise over smoky salmon followed by a redwood note.  The big finish of marzipan, melon and leather lingers on the tongue.

Ittero alli rossi: $38   A bouquet of cloves wrapped in raspberry heralds this complex blend of syrah with malbec, and mourvedre.  The palate detects vanilla and jasmine overlain by the clove bouquet with a breath of pipe tobacco and nectarine.

2012 Cabernet sauvignon Black wing: $30   An inviting cherry nose with hints of blackberry and pomegranate delivers a mature, tannic, mouth-filling experience that lingers with a baked apple, brown sugar and candy-smooth finish.

2008 Merlot: $28   A breath of juniper and a hint of pine invite you to savor a complex, mouth-filling experience of true merlot that concludes with a touch of vanilla.  Enjoy this big wine with red meat, cherries, sage, and chocolate.

 

Cabernet Blend Red Wing: $30  A blend of Cabernet sauvignon and Cabernet franc.  Opens with a nose of toasted rye and autumn leaves accented with star anise and cedar. Finishes with dried cherry and damask rose, with plum notes and a hint of leather. This medium-bodied red would be great with roasted poultry. It's ready to enjoy now or can be aged to develop even greater complexity.

Cabernet sauvignon 2004 Reserve: $50  Our first vintage, aged in barrel and then matured in bottle, exhibits the exquisite effect of long aging of the high-acid reds produced in the cool nights and hot days of Wawawai Canyon.
